My family harvests this salmon utilizing traditional techniques passed down through three generations. We practice "high-grading," selecting only premium specimens for custom processing, with remaining catch distributed to retailers. Each salmon is immediately bled and immersed in salt brine slush ice before transport via our beach truck to our FDA and HACCP certified processing partner where it's hand cut, this further preserves the quality of the finished product. It takes longer to process this way, but it produces a superior cut of meat with the "tearing" of machine processing. The fillet is portioned into thirds and individually vacuum packed for a more convenient small meal. This is identical to the quality we reserve for our own family consumption post-season—distinctly superior to commercial grocery or restaurant offerings.
